Energy balls

This 3-ingredient energy ball recipe is so easy to make and incredibly delicious.

Vegan, gluten free, refined sugar free | 10-12 balls | SNACK

Ingredients:

  • 200g medjool dates, pitted
  • 100g unsalted nuts of your choice (I used mix nuts here)
  • 2 tablespoons of cocoa powder
  • Pinch of salt

Steps:

  1. Preheat your oven to 180°C and on a baking tray line a parchment paper and bake the nuts for few minutes until golden.

  2. Pulse the nuts in a food processor until nicely crushed.

  3. Then add the rest of the ingredients and blend. The mixture is ready when everything sticks together and forms a big ball.

  4. Add the mixture in the fridge to cool for 20-30 minutes and then shape into balls.

Store in the fridge and consume within 10 days. If your dates are very dry soak them in boiling water for few minutes before blending. I also tried this recipe with hazelnuts and walnuts, but it will work with any nuts.
