Easy hot stir fry
This stir fry is extremely easy to prepare and it's packed with flavour!
Vegan, nut free | Serves 2 | MAIN
Ingredients:
- 250g firm tofu, cut in cubes
- 1 tablespoon of olive oil
- 1 carrot, shredded
- 120g red cabbage, finely sliced or shredded
- 120g sugar snap peas, sliced
- 2 spring onions, sliced
- Basmati rice, cooked
- Fresh coriander, sliced
Sauce:
- 2 tablespoons of each olive oil and sriracha (hot sauce)
- 1 tablespoon soy sauce
- 30ml water
- 1 teaspoon maple syrup
- 1-2 cloves of garlic, crushed
- Salt and pepper
Steps:
1.If your tofu is not already pressed, press it as shown in the video below.
2.In a wide pan, on a hight heat, add the oil, along with the tofu cubes in one layer.
3.Sauté until all sides are golden, 2-3 minutes on each side.
4.Add the carrot, cabbage, sugar peas and spring onions with a pinch of salt and sauté for a couple of minutes.
5.Add the cooked basmati rice and combine well, before you add the sauce.
6.Stir and cook for 3 more minutes.
7.Serve with fresh coriander.
