Greek tomato fritters aka domatokeftedes

Light and delicious Greek tomato fritters aka domatokeftedes are a must during summer time when the tomatoes are on their peak season!

Vegan, nut free, soy free | Serves 2 | SIDE

Ingredients:

  • 1kg tomatoes
  • 1 tablespoon of chia seeds
  • 1 teaspoon of baking powder
  • 4 tablespoons of rolled oats
  • 4 tablespoons of breadcrumbs
  • 2 tablespoons of plain flour
  • 2 spring onions, sliced
  • A handful of mint leaves, sliced
  • A handful of parsley, sliced
  • Salt and pepper
  • 1/2 teaspoon of each oregano and garlic granules
  • 200ml of vegetable oil, for frying (I used sunflower)

Steps:

1.Cut the tomatoes in half and scoop out the flesh (keep it to make a tomato sauce).

2.Grate the tomato shells carefully over sieve that is on top of a bowl and discard the skin.

3.Once you have grated all the tomatoes, add a generous pinch of salt, mix and let it sit for 20-30 minutes. This will help remove all the excess water!

4.Every few minutes, stir the mixture and push with the back of a spoon to get the water out.

5.In the meantime, prepare the chia egg by adding 2 tablespoons of water in the chia seeds and mix.

6.After 5 minutes this will become like jelly and it will work as a substituted for the egg.

7.Once the tomatoes have released all the extra moister, discard the water, add the tomato fresh into the bowl along with the remaining ingredients besides the oil. The batter should not have any water, if it has add a tablespoon more of flour.

8.Combine everything well and add in the fridge for at least 30 minutes (this can be done the day before).

9.Remove from the fridge, form into small balls (I used a tablespoon to help me keep the same shape) and wet your hands with water to prevent them from sticking. You wil get 6-8 balls depending of the size.

10.Preheat the oil and fry few at a time on a medium heat, for 2-3 minutes on each side or until golden brown.

11.Once they are ready place them on a plate with lined kitchen paper to absorb any excess oil. Continue until you have used all the batter.

We had it with tzatziki, Greek salad and aubergine rolls!
