Vegan, nut free, gluten free | Serves 4 | SIDE
Ingredients:
- 2 small cucumbers (or 1 large)
- 1 spring onion, the green part
- 1 garlic clove
- 2 tablespoons soy sauce (use tamari for a gluten free version)
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon toasted sesame seeds
Steps:
1.Slice the cucumbers in thin coins, along with the green part of the spring onion.
2.Grate the garlic and add all the ingredients in a jar, cover and shake.
3.Serve immediately.
