Cucumber salad 

The cucumber salad TikTok trend has taken the internet by storm, and I couldn't resist joining the fun! Today, I'm sharing my own take on this simple yet delicious dish. It's a refreshing and easy-to-make recipe that's perfect as a snack or side dish.

Vegan, nut free, gluten free | Serves 4 | SIDE

Ingredients:

  • 2 small cucumbers (or 1 large)
  • 1 spring onion, the green part
  • 1 garlic clove
  • 2 tablespoons soy sauce (use tamari for a gluten free version)
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon toasted sesame seeds

Steps:

1.Slice the cucumbers in thin coins, along with the green part of the spring onion.

2.Grate the garlic and add all the ingredients in a jar, cover and shake.

3.Serve immediately.
