Cottage pie

Hearty and comforting cottage pie full of veggies.

Vegan, nut free, gluten free | Serves 6 | MAIN

Ingredients:

For the filling

  • 1 tablespoons of olive oil
  • 1 onion, chopped
  • 1 leek, finely sliced (only white parts)
  • 2 cloves of garlic, crushed
  • 2 carrots, cut in small cubes
  • Pinch of sugar
  • 1 courgette, cut in small cubes
  • 200g white mushrooms
  • 2 tablespoons of tomato paste
  • 1 tablespoon of soy sauce
  • 1 bay leaf
  • 1 vegetable bouillon cube
  • 240g green lentils (drained weight), drained and washed
  • 150g garden peas
  • Handful of fresh rosemary and parsley
  • Salt and pepper
  • 1 teaspoon of oregano and chili flakes

For the mash:

  • 1kg potatoes, peeled and cut in big cubes
  • 1 heaped tablespoon of vegan butter (I used Flora butter)
  • 1/2 teaspoon of garlic granules
  • Salt and pepper

Steps:

1.In a large shallow pan, on a medium heat, add the olive oil, onions, leek, garlic, carrots and courgette and sauté for 4-5 minutes until all the veggies have nicely caramelised.

2.Season with salt and add a pinch of sugar to help the caramelisation.

3.Add the mushrooms in a food processor and pulse for few seconds.

4.Add the mushrooms in the pan and sauté for few minutes.

5.Add the tomato paste, soy sauce, bay leaf, veggie cube and stir to incorporate.

6.Add 100ml of water, the lentils and peas, season and cook for 5-10 minutes.

7.In the meantime, add the potatoes in a pot, cover with water and add on a high heat. Bring to boil and simmer on a medium heat for 8-10 minutes or until the potatoes are cooked.

8.Once the potatoes are cooked, drain them, season well, add garlic and butter and use a potato masher or a fork to mash. Taste and adjust the seasoning to your preference.

9.The filling must be ready by now, add the fresh herbs and taste to adjust the seasoning if needed.

10.Preheat the oven to 180°C.

11.In a baking tray (25x34cm) spread the filling in an even layer, then add the potato mash on top and spread evenly.

12.Use a fork to create ridged pattern on top.

13.Bake for 30 minutes.
