Cinnamon roasted sweet potatoes
These roasted sweet potatoes are full of flavour, and you need less than 10 minutes of prep!
Vegan, nut free, soy free, gluten free | Serves 4 | SIDE
Ingredients:
- 2 sweet potatoes
- Salt and pepper
- 1/3 teaspoon of each ground cinnamon, nutmeg, ginger
- 2 cloves of garlic
- 2 tablespoons of olive oil
Serve with:
- Spring onion
- Fresh coriander
Steps:
1.Preheat the oven at 180°C.
2.Wash really well the sweet potatoes and cut them in bite size pieces.
3.Add the potatoes in a baking tray along with all the spices, olive oil and garlic.
4.Mix all well and cover with foil.
5.Bake covered for 40 minutes, remove the foil, and bake for additional 10-15 minutes.
6.Serve with spring onions and fresh coriander.
