Chickpea no egg salad sandwich

Today we are making the most delicious and easy chickpea, no-egg salad! It’s super easy, it requires minimum amount of chopping and it's great to meal prep as it lasts few days in the fridge.

Ingredients:

  • 1 spring onion
  • 1 pickled cucumber (3-4 four small)
  • 1 tablespoon of each vegan mayonnaise, vegan yogurt, olive oil, lemon juice
  • Zest of half lemon
  • 1 teaspoon of each dried oregano, garlic granules and chili flakes
  • Salt and pepper
  • 240g chickpeas, cooked
  • 70g sweetcorn, from a can, drained and rinsed

Serve with:

  • Lettuce
  • Bread of choice

Steps:

1.Chop the onion and cucumbers.

2.In a large bowl, add the mayonnaise, yogurt, olive oil, lemon juice and zest, spices and whisk to combine.

3.Add the chickpeas and mash them a bit with a fork.

4.Then add the rest of the ingredients and combine well.

5.Taste and adjust the seasoning to your preference.

6.Enjoy as it is, or as a sandwich with some toasted bread or in a wrap. I always add some greens as well.
