Bulgur - purguri

Delicious and easy bulgur and takes 15 minutes to prepare!

Vegan, nut free, soy free | Serves 4 | SIDE

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely sliced
  • 1 carrot, grated
  • 250g bulgur wheat
  • Salt and pepper
  • 125g tomato passata
  • 1/2 teaspoon dried oregano
  • Fresh parsley, chopped

Steps:

1.In a saucepan, on a medium heat, sauté the onions with the olive oil.

2.Once translucent, add the grated carrot and sauté for a couple of minutes before you add the bulgur.

3.Saute for a minute and season with salt and pepper.

4.Add the tomato passata and oregano, stir to incorporate.

5.Add 500ml of boiling water and stir.

6.Bring to boil, lower the heat, cover and cook for 10 minutes.

7.After 10 minutes, uncover, stir in the parsley and enjoy.

I served with Cypriot meatballs and Greek style plant-based yogurt.
