Bean and quinoa salad

This bean and quinoa salad is full of crunch and flavour, it only takes few minutes to put together and it makes a perfect lunch or dinner!

Vegan, nut free, soy free, gluten free | Serves 1 | SALAD

Ingredients:

  • 80g quinoa
  • 1/2 red bell pepper
  • 1/2 red onion
  • 1/2 avocado
  • 120g red kidney beans, from a can
  • 40g sweet corn, from a can

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/3 teaspoon of Dijon mustard
  • 1/2 lime, juice
  • Salt and pepper
  • Pinch of dried oregano and garlic granules
  • Some fresh coriander

Steps:

1.Cook the quinoa according to the package instructions.

2.Once it cooks, let it cool down for a bit, while you prep your veggies and dressing.

3.Rinse and drain the beans and sweet corn.

4.Cut the bell pepper, onion and avocado into small cubes.

5.Cut the coriander and add all the ingredients for the dressing in a jar or bowl.

6.Mix well to combine.

7.Add all the ingredients in a mixing bowl, along with the dressing and mix to combine.
