Banana overnight oats

This January, I'm kicking off a new series: Batch Breakfast! Each week, I'll share a recipe that allows you to prepare delicious breakfasts in advance, making your mornings stress-free. This week's recipe a banana overnight oat, packed with goodness that will keep you satisfied till lunch time!

Vegan, soy free, gluten free | Serves 5 | BREAKFAST

Ingredients:

Dry:

  • 170g oats
  • 50g walnuts
  • 2 tablespoons chia seeds
  • 1 tablespoon each hemp and flax seeds
  • 1 teaspoon cinnamon

Wet:

  • 2 bananas
  • 400ml soy milk
  • 1 tablespoon peanut butter

Steps:

1.In a food processor, add all the dry ingredients and pulse for a couple of minutes.

2.Then add the wet ingredients, and blend util everything is well combined.

3.Devide the mixture in 5 jars (or in an airtight container), cover them and store them in the fridge overnight.

4.When you are ready to enjoy, add some toppings in the jar or serve it in a bowl. I like to serve mine with plant-based yogurt, dried fruits, cacao nibs or any nuts/seeds for a crunch and some maple syrup.

Notes:

*Store them in fridge for up to 7 days.
