Apricot balls

These little balls are a great protein snack, and they are easy to make. The spices compliment the tanginess of the apricots, so make sure to include them.

Vegan, refined sugar free, gluten free | 10-12 balls | SNACK

Ingredients:

  • 80g pistachios
  • 200g dried apricots
  • 1 tablespoon of maple syrup
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of Dhow Nature Foods turmeric (10% discount code: DHOWLIKENATALI)
  • 30g desiccated coconut

Steps:

  1. Pulse the nuts in a food processor until nicely crushed.

  2. Then add the rest of the ingredients and blend. The mixture is ready when everything sticks together.

  3. Add the mixture in the fridge to cool for 20-30 minutes and then shape into small balls.

  4. Cover the balls with the desiccated coconut, store in the fridge and consume within 10 days.

If your apricots are very dry soak them in boiling water for few minutes before blending.
