Spanish inspired beans

Spanish inspired butter beans with a delicious tomato sauce!

Vegan, nut free, soy free | Serves 2 | MAIN


  • 1 tablespoon of olive oil
  • 1 red onion, chopped
  • 3 cloves of garlic, chopped
  • 4 sundried tomatoes
  • 2 tablespoons of tomato paste
  • 1 vegetable cube
  • Salt and pepper
  • 1/2 teaspoon of each paprika, chilli flakes and oregano
  • 2 x 230g butter beans (drained weight), drained and washed
  • Fresh thyme and parsley



  1. In a pot, on a medium heat, add the olive oil and onion and sauté until translucent.

  2. Add the garlic and sundried tomatoes and sauté for a couple more minutes.

  3. Add the tomato paste, vegetable cube and herbs and stir.

  4. Add 300ml of boiling water and stir to dissolve the veggie stock.

  5. Simmer for 5 minutes, then blend the tomato sauce in a blender until smooth. Add the tomato sauce back in the pot, along with the butter beans and stir to coat.

  6. Cook for 10 minutes on a medium heat.

  7. Add the fresh thyme and parsley and adjust the seasoning to your preference.

  8. Serve with toasted bread.
